JEAN ANSELME BRILLAT-SAVARIN (1755-1826) was a French lawyer and politician who gained fame in the early 19th century as a gastronome. He is one of the seminal figures in the study of food culture and one of the founders of the gastronomical essay. He is also one of the earliest to suggest that sugar and carbohydrates contribute to obesity, and as such was an early proponent of low-carb diets.
